Answer accepted. I recently received a similar request from one of the users I work with. Ultimately, you need to set the Epic Status to Done. To do this, add the Epic Status field to the issue screen. Once added, go into the epic that you want to mark as done, and change the epic status to done. This is different than the general issue status. So they removed the automatic display but left open the option to put the list into the view if you need it. Go to Configure Board -> Card Layout and add a new field to the "backlog" section. You should find "Sub-tasks" on the list. This will display a list of all the subtasks on each story in the backlog.
This field allows you to pick a color for an epic right on the creation screen. It can also be used as a way to (bulk) edit epics that have been created. The colors can only range from the 14 pre-set epic colors in Jira. To change colors through this field, you must edit the written code presented on the field, changing its number.

Generally this is done by either: Iteratively adding to the epic's fields and the re-fetching the epic. This can be slow and error-prone.
